Sausage and potatoes is a staple recipe in our home. My husband and kids absolutely love it, and it’s so easy to make!

Don’t let this whole blogging thing fool you, we are a very busy family here at Simply Rooted Farmhouse. My husband and I work full-time outside of the home, and we have two wild little boys ages 4 and 2. Evenings are certainly a challenge to say the least. By the time we get home from work, there are only two hours to feed kids, bathe them, wind them down (yeah, right) and put them to bed. That doesn’t leave much time for cooking, so simple meals like this oven-roasted sausage and potato dish hit the spot.

Being able to have simple recipes like this in our recipe box makes meal time so much easier. Plus, because everything is cooked in one pan, cleanup is a breeze! This leaves us more time to hang out and enjoy our crazy kiddos.

OVEN-ROASTED SAUSAGE AND POTATO DISH: MEAL PREP EDITION

When it comes to meal prep, I will usually spend some time on Sundays cooking a couple of meals to get us a head start on the week. Depending on what I am making, throwing a quick batch of this oven-roasted sausage and potato dish is almost always on the table! This meal doesn’t require much prep work, plus it reheats very well for leftovers.

Or perhaps you aren’t into meal prepping, and just need something to throw together and eat. We love this recipe for that too.

We love simple recipes that put our garden to good use, and this recipe is no exception. Potatoes are grown in our SUMMER GARDEN and we store them in the basement once they are harvested. We have had pretty good luck with packing potatoes in wood shavings and storing them in cardboard boxes in our basement each fall and winter.

Onions are also easy to grow and once dried, they have a very long shelf life. We were eating onions from our garden for months! We still have a few left, but they are so tiny!

Peppers are some of our favorite vegetables to grow and store. Once ripe, we wash the peppers and cut them open to remove the seeds. Some of the seeds are saved for future planting, you can check that out by reading this post: HOW TO STORE HEIRLOOM SEEDS (AND WHY YOU SHOULD). As for the rest of the pepper, we slice them into strips and throw them in the freezer! We generally grow enough peppers so that we do not need to purchase any from the store.

TOOLS AND INGREDIENTS NEEDED TO MAKE AN OVEN-ROASTED SAUSAGE AND POTATO MEAL

  • 2 lb sausage (we use sweet Italian sausage)
  • ~ 8 gold potatoes
  • 1 small onion
  • 2-3 bell peppers
  • Oil (to season)
  • Mrs. Dash seasoning
  • Large mixing bowl
  • Large baking pan
  • Aluminum foil

HOW TO MAKE OVEN-ROASTED SAUSAGE AND POTATOES

Preheat the oven to 425 degrees and line the baking pan with aluminum foil. Then set aside.

Wash and cut the potatoes into small chunks, then transfer to the mixing bowl. We do not peel the potatoes.

Next, peel and chop the onion into small pieces and transfer to the bowl as well.

Cut the sausage into 3/4″ to 1″ sections, and add to the large bowl of vegetables.

Mix in enough oil to evenly coat the contents of the bowl. Next add Mrs. Dash, then dump everything out onto the baking sheet and spread so it’s laying flat.

Once laying flat, sprinkle some salt over top.

While that is cooking, chop the peppers and set them aside.

Cook the sausage and potatoes for about 35-40 minutes, then remove from the oven and gently flip everything. Then add the peppers over top and return to the oven for an additional 15-20 minutes or until cooked.
