Growing up, we always had a platter of deviled eggs made with relish on the Easter dinner table! Deviled eggs are delicious, and very simple to make. In this post, I am sharing our family recipe for easy homemade deviled eggs with relish!

WHAT ARE DEVILED EGGS?

Deviled eggs are hard boiled eggs that have been stuffed. They are also known as stuffed eggs, dressed eggs, Russian eggs … we’ll get into the whole process of making them below.

The eggs are served cold, generally as a side dish or appetizer. They make a beautiful display on the dinner table, especially topped with a dash of paprika!

WHY ADD RELISH TO DEVILED EGGS?

Relish is a great ingredient to add to deviled eggs because of it’s taste and texture. The egg yolks mixed with other ingredients often make a yolk paste, and the relish gives the mixture just the right amount of texture. We love to use sweet relish, and only a tablespoon is all that you need!

For those who are not big relish fans, just skip that ingredient and the deviled eggs still taste great!

START WITH THE PERFECT HARD BOILED EGG

The perfect deviled eggs start with the perfect hard boiled eggs. A hard boiled egg is the base for this recipe. So it is important to have eggs that have been cooked well and peeled well for good presentation.

I share all about hard boiled eggs in this post: How to Make (and perfectly peel) Hard Boiled Eggs.

Hard boiled eggs are easier to peel if they are a couple of weeks old. Be sure to save those farm fresh eggs just laid today for an omelette and opt for eggs more towards the back of your refrigerator. My other major egg-peeling hack is to use a hard boiled egg peeler.

  • Hard boiled egg peeler: this little tool is such a time saver, plus it perfectly peels eggs so that your deviled eggs are smooth and perfect!
  • Mixing bowl: either a small or medium-sized bowl will do the trick, depending on how many deviled eggs you are making
  • Potato Masher: a fork or other kitchen tool can be used, but I find it easier to use a good potato masher!
  • Piping bags and tips: Completely optional, but this is a great way to get the filling into your hard boiled eggs that’s neat and beautiful.

  • 12 hard boiled eggs
  • 1 heaping TBSP sweet relish
  • 1 TBSP dijon mustard
  • 2 1/2 – 3 TBSP mayonnaise (we use miracle whip)
  • Dash of paprika, salt and pepper

HOW TO MAKE CLASSIC HARD BOILED EGGS WITH RELISH

hard boiled egg yolks to be mashed into deviled eggs

Start with 12 peeled, hard boiled eggs. The eggs must have been chilled for about an hour. Cut each egg in half and pop the yolks into a mixing bowl. Save the egg whites for use later.

Use a potato masher to break up all of the egg yolks and mash them into crumbles. Next, begin to add the ingredients and continue to mix with a silicone spatula. Add in the relish, mustard, and mayonnaise. Once mixed into a paste, add a dash of paprika, salt and pepper to taste.

The deviled egg mixture can be spooned into the egg whites, or piped in using a piping bag or ziplock bag with the tip cut off. Using frosting tips is a great way to beautifully add the filling to eggs.

After filling, place the eggs on your favorite serving platter and sprinkle with some more paprika. Enjoy!
